What a Way to Start the Day!

It's breakfast time.  Some things to whip up to get them up and at 'em.



Banana Crumb Muffins

1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 ripe bananas, mashed
3/4 c. sugar
1 egg, lightly beaten
1/3 c. butter, melted

Topping:
1/3 c. brown sugar
1 Tbsp. flour
1/8 tsp. cinnamon
1 Tbsp. butter

Combine dry ingredients in a bowl. In a mixer, combine bananas, egg, and butter; mix well. Add in dry ingredients. Fill greased muffin pan. Combine brown sugar, flour and cinnamon. Cut in butter. Sprinkle over muffins. Bake at 375 degrees for 18 to 20 minutes. Remove to cooling rack. Yields 1 dozen.



Hearty Sausage Mini Quiches
Christmas Day breakfasts are big at my house. This makes nice individual servings. It'd be great with a sweet roll and some fruit.

3 eggs, lightly beaten
1/4 c. milk
1 c. sharp cheddar cheese, shredded
1 tsp. salt
1/4 tsp. pepper
1 c. frozen hash browns
1 lb sausage, cooked and drained

Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients. Place foil baking cups in a muffin tin. Fill with sausage mixture. Bake at 350 for 20-25 minutes. Yields 12.


Home Ec Muffins


These muffins tasted great and were very moist. You could serve them for breakfast or as a substitute for a roll at supper.

1/2 c. butter, softened
1/2 c. sugar
1/4 c. packed brown sugar
1 egg
1 c. unsweetened applesauce
1/2 tsp. vanilla extract
1 1/4 c. all-purpose flour
3/4 c. vanilla wafer crumbs
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. ground nutmeg
1 c. chopped pecans

In a large bowl, cream butter and sugars until light and fluffy. Add egg; beat well. Stir in applesauce and vanilla. Combine flour, crumbs, cinnamon, baking soda, and nutmeg; stir into creamed mixture just until moistened. Fold in pecans. Fill greased or lined muffin cups. Bake at 350 degrees for 20-25 minutes. Cool for five minutes before removing. Makes 12 muffins. Serve warm.


Honeybun Cake
I got this recipe from my cousin Patricia many years ago. It's a really good one to take somewhere since it makes a lot.

1 box yellow cake mix
8 oz. sour cream
1/2 c. sugar
2/3 c. vegetable oil
4 eggs
1 c. brown sugar
1 Tbsp. cinnamon
2 c. powdered sugar
1 Tbsp. vanilla
3 Tbsp. milk

Stir cake mix, sour cream, sugar, oil, and eggs well. Pour half of batter in a greased 13x9 cake pan. Mix brown sugar and cinnamon; sprinkle over batter. Top with remaining cake mix. Bake at 350 degrees for 45 minutes. Make a glaze with powdered sugar, vanilla, and milk; spread over cake while hot.
